Easy Blender Gazpacho

- 4 medium tomatoes, quartered
- 1 medium seedless cucumber (2.5 cups)
- 1 small red bell pepper
- 1 TBS sherry vinegar
- 2 cloves garlic
- Puree all ingredients in blender until smooth.
- Ladle into bowls and garnish with fresh herbs such as basil, cilantro or dill.
